We are deep into the trenches of homeschooling, soccer and football. With four kids my time is spread thin and I am always trying to provide my family of six with quality meals that won’t take me hours to make. Our very favorite meal when fall starts to set in is beef soup (Caldo de Res). It’s a hearty beef with fresh savory veggies that are packed with flavor and perfect for cool weather. Truth be told this is one of the few recipes that my boys will eat every bite of without picking through it. My youngest boys are picky eaters and it takes a bit of a miracle to get them to eat any vegetable.
- 2 lbs. Round-Bone Sirloin Steak
- 4 Cups Water
- 1 packet Sazon (I purchase this one)
- 1 Teaspoon salt, to taste
- 3 carrots sliced
- 3 potatoes, chopped
- 2 squash, sliced
- 2 corn on the cob, quartered
- 1/2 head cabbage, quartered
- Lime wedges, for serving
- Cilantro, for serving
Add 4 cups water, 1 packet Sazon, and beef to mutlipot. Seal cooker and place multipot on meat/stew setting for 30 minutes. Once done use the quick-release valve to relieve pressure.
Add 1 teaspoon salt, sliced carrots, chopped potatoes, sliced squash, halved corn and quartered cabbage. Seal cooker and place multipot on soup setting for 12 minutes. Once done use the quick-release valve to relieve pressure.
Serve with a wedge lime, cilantro and salt to taste.
