We went out with friends to 54th Street Grill and ordered their famous Gringo Dip aka Spinach Queso Dip. I had never tried it, but my friends swore it was their favorite. I was intrigued after the first bite, because it tasted just like queso dip with so much more flavor. I knew the next time I made queso I would have to alter my own recipe to try and make our own gringo dip or spinach queso dip.
Spinach Queso Dip Recipe
Spinach Queso Dip Ingredients
- 16 oz. block of pepper jack cheese
- 1/2 an onion
- 1 small tomato
- 1 bunch of cilantro
- 1/2 lime juice
- 1 teaspoon cayenne pepper (more or less to taste)
- 2 tablespoons Parmesan cheese
- 4 oz. whole milk
- 2 tablespoons butter
- 10 oz. creamed spinach (frozen bag)
Spinach Queso Dip AKA Gringo Dip Copycat Directions
Cook spinach according to package directions.
While spinach cooks dice up the block of cheese, tomato, onion, (1) handful of cilantro.
Place all of it in a microwave-safe bowl. Add in milk, melted butter, Parmesan and lime juice. Place bowl in the microwave for one-two minute intervals, mixing in-between. When cheese is thoroughly melted remove.
Add creamed spinach to cheese dip and mix until completely creamy. Add cayenne pepper to taste. Mix together. Serve hot with your favorite tortilla chips.
This is definitely the most delicious queso we make at home. It tastes almost exactly like the Gringo Dip at 54th Street and it’s super easy to make. Wow them at your next party with this intensely flavorful dip that will definitely fill everyone up just on dip alone. I have every intention of eating this as an appetizer and find myself so full that I have to skip the meal. This recipe is definitely enough to share with a group of friends, just remember to save room for the next course. It goes perfectly with bbq or even Mexican night.
